SLOW COOKER CORNED BEEF & CABBAGE
With St. Patrick's Day just around the corner, Corned Beef & Cabbage is a must for our family table! This dish might sound a bit intimidating, but in the Slow Cooker, it's really easy! (Actually, it's easy enough to serve year-round!)
If you can find corned beef brisket on sale, why not stock up to keep some in the freezer? Then you can enjoy Slow Cooker Corned Beef & Cabbage anytime you like!
WHAT IS CORNED BEEF?
The term "corned beef" is a little confusing to many of us, especially since it has nothing to do with corn! It actually comes from the process used to brine and season the beef. The salt that is traditionally used in the brine is a large grind, which used to be called "corns" of salt. Often, additional spices will come in your brining packet with the brisket. You'll want to use these – they add amazing flavor!
Because corned beef is made from beef brisket, it's best to braise it low and slow. This is where the Slow Cooker can really do its thing! It slowly breaks down the connective tissue and infuses the flavors into the meat, which results in a tender, savory, incredibly delicious dish. You're going to love it!
DO I NEED TO USE BEER WHEN MAKING SLOW COOKER CORNED BEEF & CABBAGE?
My recipe does call for a bit of beer added with the beef stock, because it adds a delicious depth to the dish. The alcohol cooks off, so you're just left with the flavor. If you're concerned about that though, you can use a non-alcoholic beer – and if you're gluten free, there are some great gluten free beers that you can use as well!
If you are uncomfortable cooking with beer though, you can leave it out. It won't be exactly the same, but it will still be delicious!
WILL SLOW COOKER CORNED BEEF & CABBAGE FREEZE WELL?
Yes, Slow Cooker Corned Beef & Cabbage will freeze very well! If you're able to find corned beef brisket on sale, be sure to buy extra and keep it in the freezer. If you would like to freeze any leftovers, just package them in an airtight container and pull them out whenever you need them! The cabbage may break down a bit in the freezing process, but it will still be good.

Slow Cooker Corned Beef and Cabbage Recipe
Slow Cooker Corned Beef & Cabbage is a delicious St. Patrick's Day tradition - but it's so easy to make, you can serve it any time!
Servings 10
Calories 552 kcal
- 6 large carrots peeled and cut
- 10-12 baby red potatoes
- 1 medium onion diced
- 4 cups beef broth
- 1 4 pound corned beef brisket with spice packet.
- 6 oz beer
- 1/2 a head of cabbage coarsely chopped

Dice onions, peel and slice potatoes.

Wash baby red potatoes.

Place corned beef in bottom of slow cooker.

Sprinkle spices over the top of the brisket

Add carrots, onions and potatoes.

Pour beer around the sides, so you don't wash off the spices.

Cook on low for 8 hours.

An hour before serving, add cabbage.
You can add the cabbage at the beginning, but it will be much softer and more like soggy soup cabbage, rather than a steamed vegetable.
